Bitterleaf soup - Onugbu

Nigerian bitter leaf soup, known as Ofe Onugbu in the Igbo language, is a flavorful and nutritious dish from Eastern Nigeria. Despite its name, a properly prepared bitter leaf soup should not taste bitter, as the leaves are thoroughly washed to remove their sharp taste. The soup is traditionally thickened with pounded cocoyam and enriched with assorted meats, fish, and traditional spices.
